This salad was so fun to create…I literally walked in our garden and harvested everything for this fresh garden salad! Such a perk of living on a produce farm.

We’re in full swing here of all the summer produce coming to its peak ripeness, so everything is beautiful and vibrant. There really isn’t anything better than growing your own food and enjoying it right after we pick it.

I’ve also adopted a new routine of making a homemade dressing once a week. I make enough at the beginning of the way through. We save a ton of money from having to buy store bought, and also there aren’t any preservatives…so yay! I paired a honey mustard vinaigrette with our garden fresh salad because I thought it would go perfectly with all the root vegetables.

If y’all don’t have gardens in your backyard, go to your local farmers market to enjoy the freshest produce possible, and be sure to ask your farmers important questions pertaining to their growing methods…we all want clean food!

Garden Fresh Salad Recipe

Ingredients:

-2 cups Clean Genes Lettuce Mix

-3 sliced radishes

-1 turnip thinly sliced

-1 carrot shredded

-1 golden beet thinly sliced

-1 hard boiled egg (I boiled about 8 minutes)

-1/4 cup pea shoots

Dressing Ingredients:

-1 clove garlic, peeled and sliced in half

-1 cup olive oil

-1 tablespoons Dijon mustard

-2 tablespoons honey

-3 tablespoons white wine vinegar

-salt

-pepper

Directions:

Rub the sides of a bowl with the garlic, then discard. In bowl whisk mustard, honey, and vinegar. While whisking, slowly add olive oil. Season with salt and pepper.

Assemble all the vegetables and boiled egg on a bed of mixed lettuce. Drizzle the dressing on top and mix in pea shoots on top.

Store remaining salad dressing in a mason jar for up to one week in the refrigerator.
