This Japanese variety is sometimes referred to as a salad turnip due to its crisp, delicious raw flavor.  If you've noticed what appears to be a white turnip, you found a Hakurei turnip or Japanese turnip. Pick up these gems and sauté them and their greens. Unlike other turnips, Hakurei turnips can be eaten raw or cooked. The skin is edible, so add them to a salad or eat it like you would an apple.
